 Ingredients

  • Shortbread Crust: 1 1/2 cups Flour, 1/2 cup Ground Pecans, 1/3 cup Sugar, 1/2 cup Softened Butter, 1 Egg (separated).
  • Cranberry Layer: 1 can Cranberry Sauce (or Relish), 2 tbsp Sugar, 1 tbsp Cornstarch, Lemon juice/zest.
  • White Chocolate Filling: 32 oz Cream Cheese, 2/3 cup Sugar, 8 oz White Chocolate (melted), 4 Eggs, Reduced Orange Juice, Orange zest, 2 tbsp Cranberry Liqueur.
  • Topping: 3 Seedless Oranges (thinly sliced), 2 cups Sugar, 4 cups Water.

 Instructions

  1. The Crust: Mix flour, pecans, and sugar. Blend in butter and yolk. Chill 10 mins. Roll into a 9-inch circle and bake at 400°F for 15-20 mins. Line sides with remaining dough and seal with egg white.
  2. Cranberry Glaze: Cook cranberry sauce, sugar, and cornstarch until thick. Add lemon zest and juice; let cool.
  3. White Chocolate Filling: Reduce 1.5 cups orange juice to 3 tbsp. Beat cream cheese, sugar, orange reduction, and liqueur. Blend in melted white chocolate and eggs.
  4. Assembly: Spread cranberry glaze over crust. Pour white chocolate filling on top. Bake at 350°F for 50 minutes. Cool and chill overnight.
  5. Candied Oranges: Simmer orange slices in sugar water for 2 hours until translucent. Drain, boil syrup until thick, and arrange slices over the cake. Brush with syrup.
